This stunning prestige cuveé from Bollinger is comprised of two-thirds Pinot Noir and one-third Chardonnay from Premier and Grand Cru vineyards. The wine ferments entirely in old oak (some 40 year old barrels) and represents the richer style of vintage bubbles. Honey, cinnamon, fresh pastry, orange peel, apricot, round citrus, and almond all dance effortlessly on the palate. The individually riddled bottles spend a full seven years on the lees. This wine was sipped by James Bond himself in Casino Royale.
