A really pretty and savory Blanc de Noirs slowly reaching it’s peak maturity. With fruit from Mailly and 2 grams of dosage this Champagne offers up marasca cherry, orange zest, cocoa, and salty seashell. Very dry with great energy and tension. Pair this with fried hen of the woods mushrooms. Planted on clay and limestone in the Montagne de Reims. Fermentation and elevage occur in barrel with seven fulls years in bottle before disgorgement.
